Healthy Southwest Turkey Nachos

Like nachos, but hate the liquid cheese, the greasy meat, and the awful feeling after eating? Try this healthy recipe for southwest turkey nachos that is both good for you and filling.

What you'll need:

  • 1 large onion
  • 1 tablespoon of olive oil
  • 1 lbs. ground turkey (you can go with the super lean, but be careful, it dries out easy.
  • 1/4 cup of Worcestershire Sauce
  • 1 can of whole kernel corn (drained)
  • 1 can of black beans (drained)
  • 1 red bell pepper
  • 1 green bell pepper
  • salt & pepper
  • cumin
  • cayenne pepper
  • hot sauce
  • 2 cups of water


Begin by mincing the onion. In a large pot, heat 1 tblspoon of olive oil on medium/high. The key to heating it is the smell - at the point where you really smell the olive oil, throw the onion in (you can also check it by dripping in a drop of water. If the water sizzles, it's perfect. If the water violently spurts, the oil is too hot!).

Once the onion is beginning to turn clear (about a minute or two), throw in the ground turkey. Season with salt and pepper, and use a spoon to break up the turkey (be careful, you're dealing with raw meat. Once the turkey is cooked, use a new spoon). After the turkey is slightly brown, pour in a 1/4 cup of Worcestershire Sauce, and about ten drops of hot sauce. Stir, cover, and cook for 5 minutes, or until Turkey is brown but still moist.

At this point, pour in the corn (drained), the black beans (drained), both peppers (diced), and season with half a tablespoon of cumin and cayenne pepper (add to taste - it's totally up to you). Drop 10 more shakes of hot sauce, and pour two cups of water in. Stir, turn up to high, and cover. Cook for about ten minutes, and stir every 5 minutes. This step softens the corn, beans, and peppers, and also allows the flavors to develop.

After twenty minutes, remove the cover, and turn down to medium. At this point, you just want to reduce the water until the everything is thick (around ten minutes). Once everything is thick and has little water, you're done!

Place on some baked tortilla chips, with some lettuce and you're ready to eat. These nachos are healthy, taste fantastic, and even better, NICE & FILLING!
